Ingredients

For the Filling:

  • 1/2 cup ricotta cheese

  • 1 large egg

  • 1 egg (for egg wash)
  • 1 tablespoon water

Instructions

  1. Prepare the Filling:
    • Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
    • Add the chopped spinach to the skillet. If using fresh spinach, cook until wilted and most of the moisture has evaporated, about 5-7 minutes. If using frozen spinach, ensure it’s fully thawed and squeezed dry of excess water before adding it to the skillet. Cook for 3-4 minutes until heated through.
    • Remove the skillet from the heat and let the spinach mixture cool slightly.
    • In a mixing bowl, combine the feta cheese, ricotta cheese, grated Parmesan cheese, and the egg. Mix until well combined.
    • Add the cooled spinach mixture to the bowl and stir until all the ingredients are thoroughly incorporated. Season with salt, pepper, and nutmeg (if using). Set aside.
  2. Prepare the Pastry:
    • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
    • On a lightly floured surface, roll out the puff pastry sheets to smooth out any creases. Cut each sheet into 4 squares (you will have 8 squares in total).
    • Place about 2 tablespoons of the spinach filling in the center of each square.
